Started in 2012 on the beautiful Warner family farm, with no idea what they were getting themselves into. They began with the things that matter most and a dream to save the world from mediocre gin. they ended up stripping the industry back to its roots and became gin farmers.

They draw water from their own spring, grow the botanicals, and collect fresh honey from their own beehives. They try to keep things local and, as custodians of the land, they harvest with a respect for nature and the community. As they go, they try to give back more than they take: re-sow, replant, rebuild.

Inspired by Tom Warner’s mum, Adele, this is a unique recipe. Once a year, our Dream Team head out into the surrounding countryside to handpick the elderflower for this year’s harvest. With around 300 fresh, individual elderflowers in every bottle, this is a craft gin like no other. From field to gin in a single day.

Elderflower! Juniper berries, coriander seeds, angelica root, lavender, cardamom, black pepper, cinnamon, elderflower, orange peel.

Tasting Notes

Lovely soft floral elderflower with hints of lychees and some more subtle Juniper. A lemony zing mixes wonderfully with the elderflower giving a beautiful smooth mouthfeel like icing sugar with delicate spice and a little vanilla. The juniper fades out leaving cardamom and cinnamon with elderflower to give a long finish with a bouquet of floral and spicy flavours lingering softly.

Mediterranean tonic water, garnished with a slice of lemon and a sprig of fresh mint,
